This started out to be my ham bone bean soup but after getting the beans to soaking I found that the ham had gone bad that I was going to cook. so back to the drawing board. So it’s an original creation today. We will see how it turns out.
Wow!! I like it. I have to say that I really like the ginger overtone.. It gives it that island flavor. You cook it for about 20 minutes in the pressure cooker or if your using a regular pot just simmer it for about 2 or 3 hours. make sure you keep plenty of water in it as it can dry up and burn on the bottom. You don’t want that.
ingredients
dried bean
1/4 lb split green peas
1/4 lb lentils
1/4 lb small red beans
1/4 lb baby lima beans
1/4 lb light red kidney beans
1/4 lb black beans
put beans in pressure cooker for about 15 min and heated. let depressurize and then drained.
added
1 quart home made turkey stock
and 2 or 3 cups of water.
6 large garlic cloves pressed.
3 medium onions diced large
1/2 of zucini that was laying around.. diced up small
1 green bell pepper diced medium/small
1 medium bannana pepper diced small
1 large dark green mild pepper of unknown parentage diced small
1 small round red pepper mild of unknown heritage diced small
2 tsp cummin seed
2 tsp grated ginger
1/2 cup chopped cilantro leaves and stems
1 orange skin and all cut in 1 inch thick rings against the grain thrown in to cook. (remove after cooking)
2 teaspoons kosher or sea salt
6 1/4inch by 1 inch rings of raw ginger cooked as chunks of ginger
2 lbs of chicken breast cut into large chunks. I expect this to cook till it falls apart.
1 lbs polska kevasa sausage cut into 1/2 inch rings
After bringing the beans to a boil in the pressure cookers I added all the other ingredients and brought it all to a boil again and let cook for 20 mins under pressure. The kitchen smells absolutly delicious while these cook. With a strong scent of ginger. Oh I got to big a portions of beans and other stuff for one pot so split this into 2 pressure cookers
